Chicken noodle soup

Crockpot

  • Can of chicken broth (400ml): 1 can/bottle
  • Water with chicken broth: 6-7cups / 1.5-2L + 30-40g chicken broth
  • Carrots: 2 cups
  • Garlic cloves: 3
  • Onion: 1
  • Celery: 1 cup / 4 stalks
  • Chicken breasts: 2-3 breasts
  • Salt: 1 tbsp (20g)
  • Thyme or oregano: 1 tbsp
  • Olive oil: 1 tsp
  • Egg pasta: 100g
  • (Optional) 1 tsp soya sauce
  1. Chop the veggies in small pieces.
  2. Put the chicken, veggies and broth in the crockpot.
  3. Cook on low for 4 hours.
  4. Add the herbs and salt.
  5. Keep cooking on low for 3 hours.
  6. Shred the chicken.
  7. Correct salt/herbs.
  8. Add the pasta.
  9. Cook until the pasta is done (~10 minutes).

Normal

For the broth:

  • 2 pounds chicken carcasses or boney bits (such as wings, backs, or necks)
  • 1 large chicken leg (or two if you want extra meat for another use)
  • 1 large carrot, roughly chopped
  • 1 onion roughly chopped
  • A couple stalks of celery, roughly chopped
  • Other aromatics, as desired, such as black peppercorns, bay leaves, parsley stems, thyme, rosemary, or garlic

For the soup:

  • 1 carrot, peeled and diced into bite-sized pieces
  • 2 stalks celery, cut into bite-sized pieces
  • 1/2 an onion, thinly sliced
  • 4 ounces dry pasta of your choice
  • Chopped fresh herbs such as parsley or dill, to garnish
  • Kosher salt and freshly ground black pepper

Method

For the broth:

  1. Combine all broth ingredients in a large saucepan and cover with cold water by a couple inches.
  2. Bring to a boil over high heat, reduce to a bare simmer, and cook, skimming scum and foam from the broth occasionally with a ladle, until the legs are completely tender, 1 to 1 1/2 hours.
  3. Remove leg and set aside to cool. Strain broth into a new pot and discard the solids.

For the soup:

  1. When the chicken is cool enough to handle, remove it from the bone and shred or chop into bite-sized pieces.
  2. Add shredded chicken, carrots, celery, onion, and pasta to the soup.
  3. Simmer, stirring occasionally, until the pasta is as cooked as you like it, 10 to 15 minutes.
  4. Stir in the herbs, then season to taste with salt and pepper.
