Pisco sour
For 1 cocktail:
- 2 ounces pisco
- 1 ounce simple syrup
- 3/4 ounce lime juice (or half and half lime and lemon)
- 1/2 large egg white
- 2 to 3 dashes Angostura bitters
- Combine Pisco, lime juice, simple syrup, and egg white in a cocktail shaker. Cover and shake for 10 seconds to emulsify the egg white.
- Add ice, cover and shake until chilled (10 s).
- Double-strain into chilled glass. Garnish with 4 drops Angostura Bitters swirled with two straws.
