Pisco sour

For 1 cocktail:

  • 2 ounces pisco
  • 1 ounce simple syrup
  • 3/4 ounce lime juice (or half and half lime and lemon)
  • 1/2 large egg white
  • 2 to 3 dashes Angostura bitters
  1. Combine Pisco, lime juice, simple syrup, and egg white in a cocktail shaker. Cover and shake for 10 seconds to emulsify the egg white.
  2. Add ice, cover and shake until chilled (10 s).
  3. Double-strain into chilled glass. Garnish with 4 drops Angostura Bitters swirled with two straws.
