Scones
Ingredients
- Plain flour: 500g (4 cups)
- Baking powder: 30g (3 heaped tsp)
- Salt: 8g
- Sugar: 80g (⅓ cup + 1 tbsp)
- Butter: 100g (1 stick)
- Eggs: 2 (1 for egg wash)
- Buttermilk: 200ml (¾ cup)
- Raisins: 150g (1 cup)
Yields about 11 scones.
- Eggwash, mix:
- 1 egg yolk
- Pinch of salt and sugar
- Mix:
- Flour
- Baking powder
- Butter
- Add a pinch of salt, the sugar, the fruit.
- In a separate bowl, whisk:
- 1 egg
- Buttermilk
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not develop gluten.
- Dump the dough on a floured surface and roughly stack the dough on itself. Do not develop gluten.
- Flatten the dough to a thickness of about 3cm.
- Use a 7cm round ring to cut out the scones.
- Place the scones on a baking tray lined with parchment paper.
- Brush the tops with the eggwash.
