Roasted Potatoes

  • Potatoes (Russet for fluffiest interior, Yukon Gold for creamier): 1kg
  • Fat (duck fat, rendered chicken fat, or avocado oil): 3–4 tbsp
  • Salt
  1. Parboil: start in cold salted water, bring to boil, cook for 5-6 minutes.
  2. (Optional) Baking soda: add a pinch to the boiling water. Alkaline environment breaks down surface pectin, creating a rough starchy exterior. More texture = more crunch.
  3. Rough up: drain, return to pot, shake vigorously until edges are ragged and fluffy.
  4. Dry thoroughly: moisture kills crispiness.
  5. Coat in thin layer offat: toss well so every rough surface is coated.
  6. Don't crowd: single layer with space between pieces. Crowding = steaming.
  7. No lining: roast directly on metal. Parchment or foil traps steam.
  8. Roast at 200 °C until golden and crisp (40+ minutes).
