Adjaruli khachapuri
For 2 people.
- Cheese:
- Feta: 200g (or less)
- Mozzarella: 250g (or more)
- Dry yeast: 2 tsp (10g)
- Eggs: 2
- Flour: 2 cups
- Milk: 2/3 cup
- Salt: 1/2 tsp
- Sugar: 1/2 tsp
- Vegetable oil: 2 tsp
- Water: 1/3 cup
Dough
- Warm up the milk and the water until luke warm.
- Mix the water and milk.
- Add the yeast and salt and sugar and mix.
- Add the oil and mix well.
- Mix with flour and knead.
- Cover the dough and let it sit for 1.5 - 2 hours.
Baking
- Once the dough has risen, split it in 2 and spread each on some parchment paper.
- With a rolling pin, shape the dough into a rectangular shape.
- Put some cheese on the longer sides and roll the side of the dough over the cheese towards the center.
- Connect the long side at the ends and twist the ends a couple times. It should have the shape of a boat.
- Add the feta/mozza mix to the center of the boat.
- 250° preheated 15 minutes. Lowest shelf.
- Add an egg-yolk in the baked Khachapuri and put it back in the oven for 2 minutes.
- Take out of oven and add some butter and serve.
