Adjaruli khachapuri

For 2 people.

  • Cheese:
    • Feta: 200g (or less)
    • Mozzarella: 250g (or more)
  • Dry yeast: 2 tsp (10g)
  • Eggs: 2
  • Flour: 2 cups
  • Milk: 2/3 cup
  • Salt: 1/2 tsp
  • Sugar: 1/2 tsp
  • Vegetable oil: 2 tsp
  • Water: 1/3 cup

Dough

  1. Warm up the milk and the water until luke warm.
  2. Mix the water and milk.
  3. Add the yeast and salt and sugar and mix.
  4. Add the oil and mix well.
  5. Mix with flour and knead.
  6. Cover the dough and let it sit for 1.5 - 2 hours.

Baking

  1. Once the dough has risen, split it in 2 and spread each on some parchment paper.
  2. With a rolling pin, shape the dough into a rectangular shape.
  3. Put some cheese on the longer sides and roll the side of the dough over the cheese towards the center.
  4. Connect the long side at the ends and twist the ends a couple times. It should have the shape of a boat.
  5. Add the feta/mozza mix to the center of the boat.
  6. 250° preheated 15 minutes. Lowest shelf.
  7. Add an egg-yolk in the baked Khachapuri and put it back in the oven for 2 minutes.
  8. Take out of oven and add some butter and serve.
